"Mexican" Bruschetta
Yum yum!  The temple smelled delicious when this was baking.....eau d' garlic and basil served at our October 24th oneg.

2 Tbsp. olive oil
2 cloves garlic, finely chopped
1/4 tsp. salt
2 Tbsp. Rosemary or Basil, chopped
3 Roma tomatoes, chopped
1 small red onion, chopped
3 tortillas (10")
Grated Parmesan cheese
 
Mix oil garlic, salt and ONE tablespoon of Rosemary or Basil.  Spreak over tortillas.  Cover with tomatoes and onions, then top with remaining tablespoon of herb and a sprinkle of Parmesan cheese. 
 
Bake about 8-10 minutes at 450 degrees.  Slice into wedges; serve hot.  Makes about 24 wedges.
